      We make the chocolate for these bars with cocoa beans from the Southern Pacific paradise of Fiji!

      On the second largest Fijian island, Vanua Levu, is a hilly farm with a microclimate that’s ideal for growing cocoa. The Matasawalevu Cocoa Farm started operating around 1979 and has earned its reputation for producing exceptional cocoa beans.

      We love this chocolate straight from the package, but it is also one of our go-to varieties for baking, s’mores, drinking chocolate, and so much more. Make sure you order enough—you don’t want to run out of paradise!

      The Republic of Fiji is a group of 333 islands in the middle of the South Pacific, east of Australia and north of New Zealand. The islands are spread over nearly 500,000 square miles of ocean—almost twice the size of Texas! Vanua Levu (pronounced Va-new-ah Lay-vu) is hilly and rugged, 110 miles long and 19 to 31 miles wide, surrounded by coral reefs.

      Cocoa from Matasawalevu is brought to us by Cacao Fiji, which was founded in 2014 by Arif Khan. He had met several Fijians who were passionate about farming cocoa but struggled to find markets for their products. After tasting the unique and impressive flavor profile imparted by Fiji’s terroir, he moved back to his home country with the mission to help revive Fiji’s cacao industry.

      Cacao Fiji works with a network of cocoa farmers throughout the Fiji Islands, and ferment and sun-dry the beans in a central location to achieve consistently excellent cocoa.

      We receive these beans from paradise in 110 pound bags directly through Cacao Fiji’s U.S. distributor.
